綠桔和紅桔

我都覺得綠桔是未成熟的紅桔,綠桔氣味較清新,輕盈,紅桔氣味較甜及圓潤。

**關於綠桔和紅桔的那些事**

有學生說上了Patric Collion的課,他提到綠桔是生長在熱帶地區所以不會變綠,而紅桔生長在亞熱帶或溫帶所以果皮會變色。

然而我們在德系的教學中告訴學員:綠桔和紅桔來自同一種植物拉丁學名為:Citrus reticulata,只是紅桔來自成熟的果皮,綠桔來自未成熟的果皮。

目前看到的資料都是支持後者說法,或許大家可以討論一下,以免冤枉了Collion博士~

I love the citrus. Here is Mandarin and Tangerine, same species, different continents. The Mandarin is from unripe fruit (Green Mandarin), semi-ripe fruit (Yellow Mandarin) and ripe fruit peel (Red Mandarine).
